Lentil Burgers with Tzatziki

Ingredients
  • 2 teaspoons olive oil
  • 1 cup chopped onion
  • ¾ teaspoon dried oregano
  • ⅛ teaspoon crushed red pepper
  • 2 cloves garlic, minced
  • 1½ cups chicken broth
  • ⅔ cup dried lentils
  • ⅔ cup (2½ ounces) crumbled feta cheese
  • ½ cup grated carrot
  • ⅓ cup Italian-seasoned breadcrumbs
  • ⅓ cup toasted wheat germ
  • ¼ cup parsley
  • ¼ teaspoon black pepper
  • cooking spray
  • pita bread
  • 1 cup lettuce, shredded
  • 1 avocado
  • 1 tomato
  • store bought tzatziki (or make from recipe)
Instructions
  1. Heat olive oil in sauce pan over medium-high heat.
  2. Add onion and sauté until tender.
  3. Add oregano, red pepper, and garlic. Cook for 30 seconds, stirring.
  4. Add broth and lentils and bring to a boil.
  5. Simmer on reduced heat 35 minutes or until lentils are tender. Drain them and cool.
  6. Pulse lentil mixture, cheese, carrot, bread crumb, wheat germ, parsley and black pepper in food processor until coarsely ground.
  7. Divide lentil mixture into 6 equal portions, shaping each into a ½-inch-thick patty. You could use round feta container with plastic wrap like we did.
  8. Heat skillet coated with cooking spray over medium-high heat. Add patties, and cook for about 3 minutes each side or until has desired crispiness.
  9. Split pita bread and spread tzatziki in each half.
  10. Cut burger in half and insert into pita bread.
  11. Add lettuce, avocado and/or sliced tomatoes as desired.
