Taco Pizza

I recently used Cat’s pizza dough recipe to make fresh pizza for the first time and discovered just how amazingly simple it was.

It was easily as quick as any other usual dinner I make, and, IT’S PIZZA!

So naturally I now I have to make a million pizzas of various kinds, first being a super delicious Taco Pizza!

Serves: 4 servings
Ingredients
  • Large Pizza Crust (pre-made, this recipe, or another one of your favorites)
  • ⅓ cup enchilada sauce
  • ½ cup mozzarella cheese
  • ⅓ cup Mexican mixed cheese
  • ½ pound ground beef, browned with your favorite seasonings
  • ½ cup canned corn
  • ½ cup black beans
  • ¼ cup diced onion
  • ¼ cup sliced olives
  • 2 tablespoons green chilies
  • After Baking:
  • Shredded Lettuce
  • Diced Tomatoes
  • Sour Cream
  • Guacamole
Instructions
  1. Preheat your oven to 500 degrees.
  2. Paint your dough with the enchilada sauce and cover with half of each cheese.
  3. Evenly sprinkle each of your toppings over your pizza and then top with the remaining cheese.
  4. Bake for 15 minutes or until the cheese is melted and golden.
  5. Let sit for at least 5 minutes before slicing and serving.
  6. Top slices with lettuce, tomatoes, sour cream, or guacamole.
  7. Enjoy!

We’ve been doing a lot of “make your own” type meals for Qwerty dinners lately; I think they’re a great way to make sure everyone has what they want, with minimal effort, and delicious results.

This last weeks was definitely one of the best.

Along with pizza balls, we also filled some with roast beef and amazing electric orange melty cheese.

And we topped ours all a little differently to make sure we knew just whose was whose.

Pizza Stuffed Biscuit Balls

Ingredients
  • 2 - 4 biscuits for each person (use ready to bake biscuit tubes)
  • 1 teaspoon melted butter for each person
  • Garlic Powder
  • Suggested Filling:
  • 2 tablespoons of motzerella cheese for each biscuit ball
  • 1 tablespoon of pizza sauce for each ball
  • 2 pepperoni for each ball
  • Red Onion
  • Pineapple Chunks
  • BBQ Chicken
  • Roast Beef (sandwich meat)
  • Creamy Cheddar Cheese
Instructions
  1. Preheat oven as directed on biscuit packaging - should be 375 degrees
  2. Stretch one biscuit until about the diameter of your hand with extended fingers.
  3. Place your chosen filling in the center and then fold the edges of the biscuit dough around it, pinching it all close.
  4. Place the biscuit ball, smooth side up, onto a baking tray.
  5. Brush the top with melted butter and sprinkle some garlic powder on top.
  6. Once all your biscuit balls are made, place in the oven and bake until golden brown - this should be about 15 minutes.
  7. Serve warm, but be cautious as the insides will be very hot!

Some of ours weren’t perfect balls, and more like hot pockets, but they were still amazing and cooked just as well.

Ingredients
  • 1 package frozen waffles
  • 1 jar of pizza sauce
  • 2 cups shredded mozzarella cheese
  • Various suggested toppings:
  • Pepperoni
  • Pineapple
  • Chicken
  • Bacon
  • BBQ Sauce
  • Onions
  • Jalapenos
  • Olives
  • Sausage
Instructions
  1. Place frozen waffles flat on a baking sheet and preheat oven to 400 degrees.
  2. Spread each waffle with desired amount of sauce.
  3. Sprinkle with ¼ cup of cheese.
  4. Top with desired toppings.
  5. Bake in oven until cheese is melted and a little bit golden, and the bottom of the waffles are golden and crispy.
  6. Serve hot.

 

Meatza

Meatza

I have no complaints with Pizza, it is likely my second favorite food (just behind quesadillas), but I also like changing things up, and meatza is definitely something different.

It is also a great meal for making with friends. You can put out a bunch of toppings and let everyone pick their own. Cooking the meat beforehand also allows you to go from people choosing toppings to eating meaty cheesy goodness within 20 minutes.

This recipe is my own creation. I probably don’t do it the same way twice because I’ve never written it down. I like to heavily flavor the meat, but you could probably go a little lighter on the additions to the meat if you’d prefer for the toppings to provide the flavor.

Addendum: I realized that at least in this most recent making of meatza, I didn’t use any tomato sauce. I know I’ve done it with sauce before, so if you really like sauce I wouldn’t tell you not to use it! Put it on at the same time as the rest of the toppings.

Ingredients
  • Meat "crust":
  • 3 lbs ground beef
  • 1 lb hot italian ground sausage
  • 2 eggs
  • ½ cup italian breadcrumbs
  • salt
  • pepper
  • thyme
  • garlic powder
  • Toppings:
  • pepperoni
  • mild cheddar cheese
  • mozzarella cheese
  • jalapeños
  • marinated artichoke hearts (patted dry and chopped)
  • red onion (sliced)
  • olives
  • mushrooms (sliced)
Instructions
  1. Pre-heat oven to 375 F.
  2. Put all the ingredients for the meat "crust" in a mixer or large mixing bowl.
  3. Mix until all ingredients are combined.
  4. Line 2 baking sheets with foil. I double foiled to try and reduce grease leaking onto the sheet, but this never works, as Malcolm would say: grease finds a way.
  5. Split the mixture evenly between the sheets. I put more on one because it was larger.
  6. Flatten the mixture out, try to get it spread as evenly as possible. Also try to keep it relatively rectangular so when it is cooked it is easier to evenly portion it.
  7. Bake for about 30 minutes or until it looks done.
  8. You will need to clean up the grease and grey goo stuff that is left over when done cooking. I drain the grease into a jar and then use a spatula to remove the grey goo from around the edges of the cooked meat.
  9. At this point you are ready to top! If you are serving a group of people, I suggest cutting the meat up into even pieces and allowing everyone to top their own.
  10. Increase oven temperature to 450F and bake for another 15-20 minutes or until cheese is just starting to brown.
  11. Eat!

This is one of those posts where I had the best of intentions when it came to photography, but the food was gobbled up so quickly that I was left with very little to show for it! Just trust that this is pretty freaking delicious and you should totally try it.

I swear (cross my heart!) the next time I make this cheesy, gooey, garlicky, yummy pizza that I will use all of my willpower to hold off on diving into the tasty crust and flavorful white sauce and instead just stand back and take pictures as it steams at me alluringly.

The pepperoni is optional, but it adds a nice little something for Mark (he really likes meat on pizza). I was happy to have it with or without, just depending really on what I have hanging around the house.

This recipe was born of necessity on one of those days where we *really* should have gone to the store, but *really* didn’t want to. (I call it suffering from bachelor fridge). The pizza came together quickly and, though I thought it was a making-due kind of a meal, it was pretty amazing.

  • 1½ teaspoons salt

  1. Combine yeast and warm water in a medium-sized mixing bowl.
  2. Add 1½ teaspoons of salt, two cups of flour, and knead until smooth (about 5-8 minutes).
  3. Cover and set aside.

  • 1 Tablespoon Butter
  • 1 Tablespoon Squeeze Bottle Garlic
  • ¾ cup ricotta cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon parsley flakes
  • ½ teaspoon Squeeze Bottle Basil (or dry basil, if need be)
  • 1 cup shredded cheddar
  • 1 cup shredded mozzarella
  • 10 large slices pepperoni (optional)
Instructions
  1. Preheat oven to 500 degrees Fahrenheit.
  2. Microwave the butter in small bowl until melted.
  3. Stir in garlic and set aside.
  4. Combine ricotta, salt, pepper, parsley flakes, and basil together in a small bowl. Mix well.
  5. Cut the pizza dough in half and roll out into two thin disks about ¼" thick.
  6. Paint the dough with the garlic butter mixture.
  7. Spread the ricotta mixture evenly over the dough.
  8. Sprinkle cheeses evenly over the top of the ricotta mixture.
  9. Add pepperoni (optional).
  10. Bake for 12-15 minutes or until crust is golden and the cheese has melted.
  11. Enjoy!

Once I made all ninety billion pounds of the basic pulled pork, I needed to use it before it spoiled (I didn’t really want to freeze it – something about the challenge was exciting for me). :)

Next, assemble your pizza:
BBQ Pork Pizza

Ingredients
  • ½ green bell pepper, chopped
  • ½ onion, thinly sliced
  • 1 can pineapple chunks, drained
  • ¾ cup shredded mozzarella
  • ¾ cup shredded cheddar
  • 1 cup shredded, pulled pork
  • ½ cup of your favorite pre-made bbq sauce
Instructions
  1. Preheat your oven to 500 degrees.
  2. Cut dough into two equal halves and roll out into 2 large disks ¼ inches thick.
  3. Move dough to separate baking sheets.
  4. In a separate small bowl, mix ¼ cup of the bbq sauce in with your pulled pork.
  5. Paint the pizza dough with the remaining bbq sauce.
  6. Sprinkle cheese evenly over the dough.
  7. Sprinkle pork, onion, bell pepper, and pineapple chunks evenly over the pizzas.
  8. Bake for 10-15 minutes, or until the dough is done.
  9. Serve & enjoy!

So: let’s talk breakfast pizza. Is it breakfast? Is it dinner? Is it breakfast FOR dinner? Vice-versa?

Philosophical concerns aside, it’s both tasty and easy. Especially if you’re like me and have most of the ingredients on hand already.

It’s oh-so-very lovely when you don’t have to run to the store for a recipe. If need be, you can substitute other pizza-friendly cheeses, add mushrooms, spinach, bell pepper – the combinations are pretty much limited only by your imagination.

An easy breakfast pizza that you can eat for dinner. Or breakfast. Or GO WILD and have it for lunch - you are an adult and you can make your own decisions.

  • Pizza Dough (see above)
  • 2½ cups shredded cheddar cheese
  • 6 eggs
  • 5 slices of bacon
  • ½ medium onion, diced
  • Dried parsley flakes
  • Salt
  • Pepper
Instructions
  1. Preheat oven to 500 degrees.
  2. Cook bacon until crisp, then chop into large pieces.
  3. Cut pizza dough in half.
  4. Roll out one half of dough into a large disk until very thin - about ¼" thick and place on parchment paper on pizza sheet.
  5. Sprinkle evenly with ½ of the shredded cheese, bacon pieces, and onion.
  6. Lightly dust with parsley flakes.
  7. Crack three eggs over the cheese - spread them out from one another.
  8. Generously salt and pepper the eggs, then lightly pepper the rest of the pizza.
  9. Repeat with second half of dough and ingredients.
  10. Bake for 10-15 minutes, or until the cheese is melted and eggs are cooked through.
